Temp Gauge reading high but when connected to computer it isn't

I have a 2004 280SS with twin salt water cooled 5.7GXi Volvo Pentas

The port engine was always reading 180 to 200 degrees and then drop down to 160. In the last year through general maintenance I've changed the manifold and risers, raw water pump, exhaust sensors and thermostat. Still has the same issue so changed the sensor on the thermostat housing and the temp gauge and it still rose up to 200 degrees and drop. I now changed the sensor on the engine manifold and it is climbing up to 210 and only dropping down to 195.

I borrowed a computer and connected it and each engine is running at 152 and 156 degrees and am at a loss as to why this hasn't brought this back to normal. Someone mentioned a bad ground to the gauge possbly?

Any help would be greatly appreciated.
 
Temp gauge reads high
ECM Temp does not

Check thermostat housing with IR Temp gun and see which is right

If it's the gauge, that's the issue, can live with it and just note if it gets higher, or gauge needs fixed

If it's the ECM Temp then need to replace
